Instructions of Chicken Enchiladas
Step 1:
First, we have to preheat the oven to 350 °F and grease a 9-by-13-inch (33 cm) baking dish with oil.
Step2:
In a large skillet, heat the olive oil. Keep in mind that the heat should be medium. Now add the onion, garlic, and jalapeo pepper and sauté them for five minutes, until the onions are translucent.
Step 3:
It’s time to add the shredded chicken, chilli powder, paprika, salt, and cumin. Stir them well until they just combine, and cook for another 4 minutes.
Step 4:
You can warm the tortillas in the microwave or on the stovetop to make them pliable.
Step 5:
Spread a spoonful of the enchilada sauce on each tortilla. Add a spoonful of the chicken mixture and a sprinkle of shredded cheese. Roll up the tortilla tightly and place it seam-side down in the prepared baking dish. Repeat with the remaining tortillas.
Step 6:
Pour the remaining enchilada sauce over the rolled tortillas. Sprinkle with the remaining cheese.
Step 7:
Bake for 20–25 minutes, or until the cheese is melted and bubbly.
